Not speaking from personal experience here, but I think that you
should be safe in developing on one OS and running the code on another
platform as long as you try to stay clear of those things which are
done differently. The obvious thing that comes to mind when I mention
this are paths and filenames of other files you (may) want to access
from within your script as windows and *nix each have their own place
for putting things and one uses / and the other \ to denote
directories. Stay clear from that, or keep it all in a place where you
can change the whole thing at once if needed and you should be fine.
