Even after make install, nothing will happen. Only when you stop/restart Apache will the new PHP take effect. You should have a copy of your old stuff (a backup) before you do make install. Then be ready to swap that old copy back in if something goes wrong. To minimize downtime, you can use Apache's "graceful" instead of "restart". This kills off the children a few at a time and starts the new ones -- Thus having a staggered effect of reduced performance on your server rather than a sudden "down/up" spike. Of course, then you have to be careful that you actually test the *NEW* httpd, not an old one still hanging around... I'm not sure what "graceful" does if the httpd it tries to start pukes... Be nice if it just left the other children alone, eh? Another option is to start your new httpd on a different port and make sure that works (to some extent) before killing your live server. An additional option is to do all this on a different box with all the same versions of software first to test, and to practice.
