I use EditPlus (http://www.editplus.com/) on Win32 and Emacs *hiss*
(http://www.gnu.org) on BSD.
Sometimes I even use Paper and Pencil to "edit things."

Seriously, this has been asked 4,562,457,098,128,875.9567 times on
this list. Somewhere in the archives is a URL to a page with a slew of
editors appropriate for PHP.
