If the browser considers your page to be iso-8859-1 charset, and you input characters that do not exist in iso-8859-1, these are converted to their entities. So in php you receive the entities, and you should see them in mysql(1) client. If you put these entities as values, htmlentities() is used to display the value, and you get what you see.
