I solved it!! (reading the manual a little more in-depth)
If you want PHP-ODBC to return more than 4000 chars when accessing a
memo field in Access, you must add one command:
$sql_result = odbc_prepare($connection,$query);
odbc_execute($sql_result);
odbc_longreadlen($sql_result, 8192);
Using odbc_longreadlen (result, length) you can read as many chars as
you want.
