ODBC is very important too, and of course also encryption, so we need mcrypt and mhash, or the very important FTP and PGSQL extensions. No seriously, I don't think we should enable more things by default. I even don't see any reason to enable the mbstring module, as only the japanese/koreans / other multibyte language really need this. Enabling things by default tend to annoy sysadmins who want full control of their install.
