You have to set it in the header of the mail.
Example 2. Sending mail with extra headers.
mail("nobody@example.com", "the subject", $message,
"From: webmaster@$SERVER_NAME\r\n"
."Reply-To: webmaster@$SERVER_NAME\r\n"
."X-Mailer: PHP/" . phpversion());
It's in the manual.
AND remeber RTFM.

Subject: mail() question - caution newbie here
Hello,
I've recycled some simple PHP mail scripts from the Web to create an
embedded email form from within a Flash movie. Everything works fine, in
everyone of them it did, but they all suffered from the same problem... the
FROM field in the email sent was not the FROM variable set within the page.
It's always the servers address: PHPMailer@host41.hrwebservices.net.
Can you please tell me if there is an obvious solution to retain the
original value of FROM? I'm VERY new to PHP :)
Thanks in advance!
