There isn't an IMAP server that plays quite as nicely with maildir
as the qmail pop3 server, but there are patches that allow the UW
imapd to deal with the maildir format. The Cyrus IMAP server is also
a possibility, but that locks you into using their mail storage and
only being able to access mail via POP3 and IMAP.
(That said, there is a very rough qmail-imapd originally developed
by Russell Nelson, which you can find at http://www.qmail.org/imap/,
and I have patches to it that allow it to mostly work with the Netscape
IMAP client. It's got a really nice architecture, but unfortunately the
IMAP standard sucks enough to make it not very much fun to turn into
a full-featured IMAP server.)
