Are you referring to just booting into a command line and not loading the "lickable" Aqua interface? I haven't done it, but I've heard you can. I've also heard you can load X-Windows instead of Aqua, although I don't know why you would want to. You can run X-Windows in Aqua and there is always the terminal program.
You can set you terminal window to be the size of the screen if you like, giving you a kind of "console mode". You can even adjust the transparency of the terminal window so you can watch a movie, playing in the background, while you hammer away at shell script or a perl script. A very neat but useless feature.
I've used a Mac for about 12 years now, but had a stint as an AIX admin for the past 4 years. I "switched back" when OS X was released.
