From what I can see, if they are that unreliable when it comes to
payment then perhaps you would be better off not doing the work in the
first place.
At some point there has to be a level of trust between you and the
client. If you start every job with the assumption that you'll be
cheated then it will affect your interaction with all your clients.
Nothing you do will stop someone who really wants to rip you off.
Everything that can be done can be un-done.
In the end you have to decide if it's someone you can work with or not.
If not, don't.
